I have been making this stew for 25 years. I have tried many recipes, but this is my very favorite. Toss the ingredients together in the morning and coming home to the aroma of comfort food. It goes so well with fresh French bread and a green salad. (The photo featured is the dish PRIOR to cooking. We ate the finished result before I had a chance to take a picture!)

Ingredients For slow cooker beef stew

  • 1 1/2 lb
    beef stew meat
  • 1 md
    onion, chopped
  • 4 lg
    carrots, peeled and cut into 1 inch pieces
  • 2
    ribs celery, cut into 1 inch pieces
  • 4 md
    potatoes, peeled
  • 1 can
    tomatoes, diced and undrained
  • 1 can
    beef broth, 10 1/2 ounces
  • 1 Tbsp
    worcestershire sauce
  • 1 Tbsp
    parsley flakes
  • 1 tsp
    thyme leaves
  • 1 lg
    bay leaf
  • 1 tsp
    salt
  • 1/4 tsp
    pepper
  • 2 Tbsp
    tapioca

How To Make slow cooker beef stew

    Brown beef cubes in skillet over medium heat. Transfer meat into crockpot.

    Add remaining ingredients. Cover and cook on low for 4-5 8 hours or on low for 4-5 hours.

    If you'd like a thicker stew, add a tablespoon or two of cornstarch mixed in a small amount (about 1/4 cup) of water and add to stew about 15 minutes prior to serving. This should thicken it.
