I made this pasta salad as a side dish for a function at our local bar and everyone fell in love with it. Now I just make a big bowl of this and sit it on the bar and walk away and watch everyone go for it and watch the smiles on their face as they eat it. And believe me there is never none left when we leave. This recipe does make a lot and can be cut down for family meals and can be either a side dish or a main course. It is simple and easy to make so I hope you try it and enjoy.

Ingredients For ro's macaroni and smoked ham salad

  • 1 lb
    elbow macaroni, cooked
  • 1/2 bunch
    green onion
  • 1 lg
    tomato
  • 32 oz
    miracle whip (divided)
  • 2 c
    boneless smoked ham
  • 1 Tbsp
    black pepper
  • 1/2 Tbsp
    celery seed

How To Make ro's macaroni and smoked ham salad

    Cook macaroni as per directions. After macaroni is done I rinse under cold water to stop cooking process and cool it off before adding the other ingredients.

    Dice green onions and tomato and place in large bowl. Chop smoked ham into small bite size chunks and place into bowl. Add cooled macaroni and mix. Add half of the Miracle Whip, pepper and celery seeds to the macaroni mixture and chill.

    I usually make this in the morning and later on that evening or the next day I add more of the remaining Miracle Whip to the salad since the macaroni absorbs the dressing. Mix well and serve.

    I have also made this with regular diced ham (if I didn't have a ham already smoked) and I have also added a package of Oscar Mayer real bacon bits to the macaroni salad along with the ham to give it a differant twist.
