Ingredients

2 c
swiss cheese, shredded
1/2 c
mayonnaise
1 c
sauerkraut, rinsed and squeezed dry
2 tsp
butter
1 c
corned beef, lean, chopped
1/4 c
thousand island dressing
2
tomatoes, sliced (optional)
1
green bell pepper, cut in rings
1/4 c
pumpernickel bread crumbs

How to Make Reuben Casserole

Step-by-Step

  • 1Put sauerkraut in buttered 1 1/2 casserole dish.
  • 2Top with corned beef, broken into bits, then cheese.
  • 3Combine mayonnaise and thousand island dressing (or substitute made with mayo, ketchup and relish to equal 3/4 cup) and spread over cheese.
  • 4Top with tomatoes or green pepper.
  • 5Melt butter in microwave and blend with bread crumbs, spread over top.
  • 6Bake at 350 for 20 minutes or until hot and bubbly.
  • 7to make pumpernickel bread crumbs place 4 slices of pumpernickel bread in food prosser and pulse until crumbly.
