I just couldn't do meat and sauce so this is my version of Sloppy Joe's. It is always a big hit with whoever I make it for. I always hear "I've never had sloppy joe's like this before.

Ingredients For really sloppy joes-open faced

  • 1 1/4 lb
    ground beef (95% lean)
  • 1 md
    yellow onion- diced
  • 1 lg
    green bell pepper- diced
  • 1 lb
    crimini mushrooms –sliced
  • 5 stick
    celery- sliced across 3/8”
  • 1 md
    pasilla pepper- diced
  • 3
    bay leaves (fresh if available)
  • 15oz can
    yellow corn
  • 15oz can
    diced tomato
  • 15oz can
    stewed tomato
  • 15oz can
    tomato sauce
  • 3/4 c
    dark brown sugar
  • 4 clove
    garlic-minced
  • 1 Tbsp
    dried oregano
  • 2 Tbsp
    smoked paprika
  • 2 Tbsp
    dried basil
  • 1 tsp
    black pepper coarse grind
  • 1 tsp
    kosher flake salt
  • 6-8
    onion rolls
  • 4 Tbsp
    olive oil
  • 2 Tbsp
    corn starch
  • pickled jalapeno slices (optional)

How To Make really sloppy joes-open faced

    Brown beef in olive oil
  • 2
    Add remaining ingredients except for jalapeno, and corn starch
  • 3
    Cook 1 hour at simmer
  • 4
    Thicken to desired consistency as this is really a very wet sloppy joe with 2 tablespoons of corn starch and 2 tablespoons of water mixed into a slurry.

    Sprinkle with Jalapeno Slices to taste
