This is an old recipe that our family loves. We make the meatballs this way with tomato soup... and also make a beef gravy sauce... either way is very good! The name Porcupine Meatballs comes from the addition of the minute rice. Enjoy!

Ingredients For porcupine meat balls

  • MEAT BALLS
  • 3 lb
    ground beef
  • 1 lb
    bulk pork sausage
  • 1 tsp
    salt
  • 1 tsp
    ground black pepper
  • 1 tsp
    garlic powder
  • 1/2 tsp
    poultry seasoning
  • 1 1/4 c
    minute rice
  • 2 lg
    onions (minced fine)
  • SAUCE
  • 1 can
    family size tomato soup
  • 1/2 can
    water

How To Make porcupine meat balls

    Preheat oven to 350 degrees.

    Mix together well the meatball ingredients. Form into 1 - inch meatballs and put into large baking pan (raw).

    Mix together the tomato soup and water. Pour over the meatballs in the baking pan.

    Bake 1-1/2 hours, basting the meatballs with the sauce frequently. ***It is done when meatballs are cooked and the rice is tender.
