you can leave out the soy sauce for a more italian taste. i came up with this dish by accident, lol. the soy sauce was added as an after thought when my son tasted it and said "hmmm, kinda tastes asian, lets try some soy sauce." we did, to a bite for each of us, liked it and so we started adding it to whole pan till we got the taste we liked. hope yall enjoy it as much as we have. i put 1.5 hrs for cooking time because i really don't remember how long we let it simmer. the lower and longer you let it simmer the more the meat picks up the flavors.

1 1/2 lblean stew meat

1 mdonion, sliced thinly

2 Tbspcrushed garlic

1 cantomato paste

32 ozbeef broth

1/4 csoy sauce, dark or light, have used both

4-5fresh basil leaves

1/2 tsporegano, dried

1/4 tspchipotle, to taste

1saute onion & garlic in oil of choice, i use safflower for the added peppery taste it can lend, with 4-5 basil leaves, oregano and chipotle powder til onion is almost caramelized.

2add meat and brown slightly on all sides.

3add tomato paste, broth & soy sauce. simmer til meat is cooked thru.
