miracle meatloaf

OK - I dont know what possesed me at the time to use the ingredients that I did in this recipe, but I call it my miracle meatloaf one because I used Miracle Whip in it and two it was a miracle that it came out so good...lol. It is really simple to make and when I do - I have to make sure that I make several to pass out to our friends.

Ingredients For miracle meatloaf

1 lbhamburger

2 lgeggs

1/2 cdiced onion

16 ozsalsa, chunky
-
15club crackers, crushed

3 Tbspmiracle whip (must be this)

1 cketchup
-
1 Tbspgarlic (crushed)

1 Tbspblack pepper
How To Make miracle meatloaf

1Preheat oven to 350 degrees

2Spray loaf pan with cooking spray

3In large bowl mix meat, eggs, onions, crushed crackers, Miracle Whip, pepper, garlic, and half of the jar of chunky salsa (your choice of hotness). Mix well and place in loaf pan

4In small bowl mix ketchup and remaining salsa and spoon half of this mixture over the meatloaf.

5Cover with foil and bake for 1 hour and 15 minutes.

6Take out of the oven and carefully uncover, drain off excess grease and top with remaining salsa mixture and put back in oven uncovered for remaining 15 minutes.
