  • 1/2 lb
    ground beef
  • 1/2 lb
    raw chorizo casing removed
  • 1 large
  • 4 clove
  • 1/2 large
  • 1/2 c
    cooked rice
  • 1/2 c
    fresh cilantro chopped
  • 1 tsp
    each salt and cumin
  • 1/2 tsp
    black pepper
  • SOUP

  • 6 c
    chicken broth
  • 1/2 c
    onion chopped
  • 15 oz
    can diced tomatoes with juice
  • 1/2 tsp
  • 1 tsp
    mexican oregan
  • 1/2 c
    cilantro chopped
  • ·
    salt and pepper to taste

How to Make Mexican Meatball Soup


  1. Mix all the ingredients together for meatballs. Shape into 24 meatballs and set aside.
  2. Place chicken broth, onion, tomato with liquid, cumin, oregano, and cilantro in large pot. Bring to a boil and reduce to a low boil and cook 10 minutes.
    Drop the meatballs in the boiling soup and continue to cook another 10 minutes.
  3. Taste and season with salt and pepper.
