A friend introduced me to this recipe about 20 years ago. Now I make it for pot lucks at work and it's always a big hit!

Ingredients For mexican garbage can or mexican lasagna

  • 1 lb
    ground beef, browned & drained
  • 1 pkg
    flour tortillas or corn tortillas, your choice
  • 1 can
    green beans, drained and chopped
  • 1 can
    corn, drained
  • 1 can
    chopped green chiles
  • 1 lg
    can refried beans
  • 1 jar
    salsa, (we like chunky and hot)
  • 1 or 2
    jalapenos, fresh & chopped (optional)
  • 1 pkg
    taco seasoning mix
  • 1 pkg
    shredded cheddar cheese

How To Make mexican garbage can or mexican lasagna

    To the browned ground beef add the chopped green beans, corn, green chilies, refried beans, salsa,jalapenos and taco seasoning. Mix together until well blended.

    Spray crock pot with Pam, put some of the beef mixture on bottom, make a layer with the tortillas, another layer of meat mixture, and sprinkle with cheddar cheese (we like it cheesy), repeat layering until crock pot is full, ending with cheese.

    Cook on low for 4-5 hours. Serve with chopped tomatoes, sour cream, shredded lettuce, and more salsa if you want. We also like to add Crunchy Tortilla chips as a side.
