    chicken breast filets cubed
  • 2 Tbsp
  • 1 pkg
    taco seasoning mix (gluten free)
  • 8
    tortillas, corn (gluten free)
  • 1 can(s)
    homemade cream of potato soup (gluten free)
  • 1 can(s)
    homemade cream of onion soup (gluten free)
  • 1 can(s)
    homemade cream of tomato soup (gluten free)
  • 1 can(s)
    diced tomatoes drained (gluten free)
  • 1 c
    shredded mexican blend cheese

How to Make Mexican Chicken (gluten free)


  1. heat oven to 350.
  2. cook chicken in butter and half of taco seasoning.
  3. mix all soups and remaining taco seasoning.
  4. mix chicken and tomatoes into soup mixture.
  5. put some of the soup mixture on the bottom of baking dish.
  6. layer 4 tortillas and then all of the soup mixture, then the other 4 tortillas.
  7. top with cheese.
  8. bake 350 for 30 minutes
