2/3 c
all purpose flour
1/2 tsp
salt
1/2 tsp
baking powder
2 Tbsp
margarine, melted
1/2 c
non fat yogurt
2
egg whites, beaten
3/4 lb
lean ground beef (or turkey), broken up
2
green onions with tops, chopped
1 large
red bell pepper, chopped
1/2 tsp
salt
2 tsp
chili powder
1/2 tsp
tabasco sauce
1 can(s)
kidney beans, with juice
1 can(s)
(6 oz) tomato paste
1/2 c
low fat grated cheese
2 c
shredded lettuce
1 c
chopped fresh tomatoes

How to Make Mexican Bean Bake

Step-by-Step

  • 1Crust:

    Stir together flour, salt, baking powder, margarine, and yogurt.
    Spread thinly on bottom and sides of a greased 7x11 inch pan.
  • 2Filling:

    Brown ground beef. Drain well and rinse with boiling water to remove any excess fat.

    Add onion, red pepper, salt, chili powder, tabasco sauce, kidney beans, and tomato paste.

    Spoon into crust.
  • 3Bake 30 minutes at 350 F.
    Sprinkle with cheese, lettuce, and tomatoes.
