Ingredients For herbed beef roast

5-6 lbeye of round roast

1/2 cflour
-
3 tspsalt
-
1 tsppaprika
-
1 tspbasil
-
1 tspmarjoram
-
1watercress, sprigs for garnish
How To Make herbed beef roast

1Place roast on a sheet of waxed paper.

2Mix remaining ingredients, except watercress.

3Pat well into roast.

4Place on a rack in a shallow baking pan.

5Do not add water or cover pan.

6Roast in slow oven (325) for 2 1/4 hours, or if using a meat thermometer, until thermometer registers 140 for rare.

7Cover pan loosely with a sheet of foil, and let stand at room temperature until serving time.

8Place on platter and garnish with watercress.

9Serve with Mustard Cream.

10*MUSTARD CREAM* 1 cup mayonnaise 1/2 cup prepared mustard 1/2 cup condensed beef consomme\' 1/4 cup cream

11Combine all ingredients in a bowl.

12Beat with electric mixer until well blended.

13Chill.
