You can adjust all the ingredients and the amounts to your liking and even add things like avocado or sour cream. You could also substitute chicken for beef. There are many ways to personalize this recipe. I hope everyone enjoys this one as much as my family does.

Ingredients For healthy taco salad

  • 6 c
    romaine lettuce chopped
  • 1 lb
    93% lean ground beef
  • 1 pkg
    1.75 oz pkg low sodium taco seasoning
  • 1/2 c
    cooked black beans
  • 1 lg
    tomato
  • 1 oz
    corn - canned or frozen either one works
  • 1/2 c
    onion
  • 2 oz
    low fat shredded cheddar cheese
  • 2 Tbsp
    low fat ranch dressing
  • salsa - as much as you want

How To Make healthy taco salad

  • 1
    In a pan over medium heat brown ground beef. Drain fat. Add taco seasoning packet.

    Dice tomato and mince onion and add to the ground beef.
  • 3
    Once the onion is tender add the corn and black beans and cook a few minutes until everything is throughly heated.

    Top Romaine lettuce with beef mixture and salsa and salad dressing and shredded cheese and enjoy!
