Kid Tested and Husband Approved! I think most folks grew up on a tight budget. As a result, our family was big on "extender meals". However, this was one of our family's favorites. It was one of my kid's favorites as well (w/2 cans of corn).Now they are grown it's a going on the 3rd generation. What makes it even better; it taste even better as a leftover. It is super easy to make a low fat/low sodium version that tastes just as good. I have substituted ground chicken or turkey, low fat cream soups and low fat sour cream and it was enjoyed just the same!

Ingredients For hamburger corn casserole

  • 1 pkg
    noodles, medium sized cooked
  • 1 lb
    ground beef, chicken or turkey
  • 1 can
    whole kernel sweet corn (drained)
  • 1 can
    cream of mushroom soup
  • 1 can
    cream of celery soup
  • 1 c
    sour cream
  • 1/4 c
    onion chopped
  • 1 Tbsp
    salt
  • 1/2 tsp
    pepper
  • 1/2 tsp
    onion powder
  • 1/4 tsp
    garlic powder

How To Make hamburger corn casserole

    In a large casserole dish mix both soups, corn, sour cream and spices.

    Cook noodles as directed on package. Definately do not over cook. I actually slightly under cook them so they do not get too mushy when you bake them in the mixture above.

    In a skillet brown your onions and ground meat with a dash of salt and pepper. Drain fat as needed.

    Add noodles and meat mixture to the casserole dish in step one. Mix well.

    Cover with a lid or foil. Bake @ 350 for 30-45 min. depending on how deep or shallow your dish is . Remove cover for the last 10 min. to brown the top slightly.
