I found this in a Texas county cookbook years ago. It stated that it was the most popular recipe at a local pie kitchen. My family has always loved it, hope you do too!

Ingredients For green onion dip enchiladas

  • SAUCE:
  • 1 can
    rotel tomatoes and green chilis
  • 2 can
    cream of chicken soup
  • 1 c
    chicken broth
  • 1 c
    velveeta cheese cubed
  • 1 pkg
    green onion dip mix (dry)
  • FILLING:
  • 1 1/2 lb
    lean ground beef
  • 1 md
    onion chopped
  • 1 c
    cheddar cheese, shredded
  • MORE:
  • 2 pkg
    corn tortillas (12 pk)

How To Make green onion dip enchiladas

    Combine all sauce ingredients in sauce pan over low heat until cheese melts; simmer over low heat an additional 20 mintues; set aside.

    In skillet, brown beef and onion; add cheese; stir until melted; set aside.

    Soften 2 packages of corn tortillas in hot oil; fill each tortilla with small amount of beef mixture and roll. Place in a 9x13 pyrex dish. Pour sauce over rolled enchiladas until covered. (you may have left over sauce}

    Bake at 450 degrees for 10-15 minutes until hot and bubbly.
