Offered as part of my Ground Beef Favorites Collection from First Ladies. This is purported to be the favorite dish of Mrs. Jack Williams, Wife of Governor of Arizona. I found these recipes in an old cookbook which has no name or any identifying labels.

Ingredients For first ladies / tamale pie

  • 2 lg
    onions
  • 2 sm
    cloves of garlic
  • 2 lb
    lean ground beef
  • 2 Tbsp
    chili powder
  • 2 Tbsp
    crisco (solid shortening)
  • 1 1/2 c
    cornmeal
  • 1 1/2 c
    water
  • 1 can
    diced tomatoes
  • 1 can
    whole kernel corn
  • 1 can
    ripe black olives
  • grated cheddar cheese

How To Make first ladies / tamale pie

    Brown first four ingredients, using shortening if necessary. Mix cornmeal and water. Add remaining ingredients except cheese and cook 3 to 4 minutes.

    Mix all together; place in roaster in oven. Cook slowly about 1 hour and 20 minutes. Top with cheddar cheese.
