enchiladas

Comfort food with a lot of flavors. These enchiladas are easy to make and are great for leftovers. Use pepper jack cheese inside the tortillas for a little extra spice and top with Sharp Cheddar Cheese.

Ingredients For enchiladas

  • 2 lb
    hamburger
  • 1/2 lg
    white onion chopped
  • 3 Tbsp
    chili powder
  • 3 Tbsp
    cumin
  • 2 can
    tomato sauce
  • 2 Tbsp
    beef bouillon
  • 1 c
    water
  • 1 tsp
    salt & pepper
  • 12
    corn tortillas
  • 2 c
    cheddar cheese, shredded

How To Make enchiladas

  • 1
    brown the hamburger meat with onions. Add the rest of the ingredients and simmer for 20 minutes
  • 2
    Dip corn tortillas into the sauce to coat and put into a 13 x 9 pan to assemble.

    Fill each tortilla with meat and sauce about 3 tblsp., add cheese and roll up in pan. When the pan is full, pour remaining sauce over the top of the enchiladas and top with Sharp Cheddar cheese.

    Bake at 325 for approx 45 minutes or until slightly browned on top.
