Ingredients For enchiladas

  • 1-2 lb
    hamburger
  • 1-2 lb
    cheese, shredded cheddar and mozzerella
  • 1 pkg
    enchilada seasoning dry mix
  • 1 can
    28 ounce tomato sauce
  • 1 1/2 c
    water
  • 1
    green pepper, chopped as desired
  • 1
    onion, chopped as desired
  • 1 can
    diced tomatoes as desired
  • 1 pkg
    tortillas, flour (package of 10) large diameter
  • GARNISH
  • shredded lettuce
  • diced, fresh tomatoes
  • sour cream
  • guacamole
  • ripe olives, sliced

How To Make enchiladas

  • 1
    Brown hamburger, chopped onion, peppers if using. Drain
  • 2
    Mix in enchilada dry mix, tomato sauce, water stir well and bring to a boil. Reduce heat and simmer 5 minutes. Simmer until veggies are tender ( if you add them to the sauce).

    Pour half of sauce into 9x13 baking dish and sprinkle half of the cheese on top of the sauce.

    Spoon meat sauce on tortilla, roll up and place in pan on top of sauce and cheese. Repeat with all tortilla's until all used.

    Pour remaining sauce and sprinkle cheese on top. Bake at 350 degrees for 20 minutes or until bubbly. Serve with garnishes as desired.
