I came up with this the other day. I was looking to create a simple dinner that was quick, tasty, and easy/peasy to assemble. So, I came up with pressure cooker beef and taters.

The good news is that if your pressure cooker has a sauté feature (like Instant Pot), this becomes a one-pot meal.

So, you ready… Let’s get into the kitchen.

Ingredients

  • PLAN/PURCHASE

  • 2 Tbsp
    sweet butter, unsalted
  • 1 lb
    round steak, or other steak of choice
  • 1/2 tsp
    hungarian paprika
  • 1/2 tsp
    onion powder
  • 1/2 tsp
    garlic powder
  • 1 - 2 pinch
    cayenne pepper
  • ·
    salt kosher variety, to taste
  • ·
    black pepper, freshly ground, to taste
  • 1/2 medium
    yellow onion sliced
  • 1 Tbsp
    flour, all-purpose variety
  • 1 c
    beef stock, not broth
  • 3 - 4`
    baby red, or golden potatoes

How to Make Cooking Under Pressure: Beef and Taters

Step-by-Step

  1. PREP/PREPARE
  2. You will need a pressure cooker/Instant Pot to make this recipe.
  3. Gather your ingredients (mise en place).
  4. Add the butter to a skillet over medium-high heat.
  5. While the butter is melting sprinkle the steak with the paprika, onion powder, garlic powder, cayenne pepper, and salt and black pepper, to taste.
  6. Add to the hot pan.
  7. Sear on both sides, about 2 – 3 minutes per side.
  8. Remove the steak and throw in the onions.
  9. Toss until beginning to soften, about 1 – 2 minutes, then whisk the flour into the beef stock, and add to the pan.

    Use a wooden spoon to scrape the bottom of the pan.
  10. Simmer for 5 minutes.
  11. Add the roast to the bowl of your pressure cooker, and then stock, onions, and taters.
  12. Set to cook on high for 14 minutes, then allow to rest for 10 minutes, before releasing the remaining pressure.
  13. PLATE/PRESENT
  14. Slice and serve with the potatoes (I like to smash them), and drizzle with the yummy gravy. Enjoy.
  15. Keep the faith, and keep cooking.
