Oh, boy, I thought regular Shepherd's Pie was great, but this one looks fantastic. Gotta love that cheese! I have tweaked this recipe a bit for my own taste. Recipe & photo: http://www.pillsbury.com

Ingredients For cheesy potato shepherd's pie

  • 1 lb
    lean ground beef (i use chuck)
  • 1/2 c
    chopped onion
  • 1/4 tsp
    salt
  • 1 pkg
    (24 oz.) bob evans refrigerated prepared mashed potatoes
  • 1 jar
    (12 oz.) homestyle beef gravy
  • 1 c
    frozen mixed vegetables
  • 1
    egg, slightly beaten
  • 4 oz
    shredded cheddar cheese
  • paprika for garnish, if desired

How To Make cheesy potato shepherd's pie

    In a large skillet over medium-high heat, cook ground beef, salt and onion, stirring, until beef is thoroughly cooked.

    Add the gravy and vegetables to beef mixture; mix well. Bring to a boil.

    Place mixture in a 2-1/2- or 3-qt. baking dish.

    Place mashed potatoes in a large bowl; add egg and mix well. Add cheese and combine thoroughly.

    Spoon or pipe potato mixture around the edge of baking dish, on top of beef/vegetables. Sprinkle with paprika if desired.

    Bake in a preheated 375-degree oven for 20 minutes or until potatoes are set and starting to brown slightly.
