cheese meatloaf with brown sugar glaze

I thought I would put a different spin to Meatloaf by adding chopped green chilies to the recipe and finishing with a brown sugar and ketchup glaze. We had it for dinner tonight with garlic mashed potatoes and peas. It must have been good! Everyone had seconds!

Ingredients For cheese meatloaf with brown sugar glaze

  • 2 lb
    ground sirloin
  • 1 sm
    onion, chopped
  • 1 sm
    4 oz can chopped green chilies
  • 1 1/2 c
    bread crumbs, dry
  • 2 lg
    eggs
  • 1 1/2 c
    shredded cheddar cheese
  • 1/2 c
    milk
  • 1 1/2 c
    brown sugar
  • 3/4 c
    ketchup

How To Make cheese meatloaf with brown sugar glaze

    In a large bowl, mix meat together with all ingredients. Except for ketchup and brown sugar. Add salt, pepper, garlic powder to taste. Mix well. In a separate bowl, microwave the ketchup and brown sugar. Stir together before microwaving, then microwave on high for one minute. Stir well. Set aside.

    Set oven to 350 degrees. Lightly spray a 9x13 pan with cooking spray.

    Shape the meat mixture into a loaf. Place in pan and bake 60-70 minutes. About 30 minutes before it's done, generously coat with glaze mixture. Bake for 30 minutes then remove from oven. Let it rest 10 minutes before serving.
