bubble up enchiladas

I made this mexican recipe last night when I had my mexican dinner. It was delicious. Using ground beef and biscuits with the enchilada sauce brought all the flavors together. Along with the taco seasoning which gave it even more extra flavoring. This is good along with all the other mexican recipes. This recipe is from Steph's recipe collection.

Ingredients For bubble up enchiladas

  • 1 lb
    ground beef lean
  • 1/2 pkg
    taco seasoning
  • 8 oz
    tomato sauce
  • 10 oz
    can enchilada sauce (i used the green)
  • 1 can
    refrigerated biscuits (i use mini grands)
  • 2 c
    mexican cheese blend
  • 1/2 c
    salsa for top (i used mild)
  • 1/2
    green pepper, diced

How To Make bubble up enchiladas

    Preheat oven to 350 degrees. Brown lean ground beef and diced green pepper in a skillet and drain off fat. Add the taco seasoning, enchilada sauce, tomato sauce and 1 cup of cheese. Stir to combine.

    Cut the refrigerated biscuits into fourths and stir them in the meat mixture.

    Spray a 9 x 13 casserole dish with cooking spray and add the mixture. Bake for 25 minutes. Remove from the oven and sprinkle remaining cheese on top. Add about 1/2 cup salsa on top. Bake an additional 10 minutes. Let stand for 5 minutes before serving.
