Ingredients

  • 2 c
    beef, cooked and shredded
  • 1 c
    refried beans, recipe below
  • 8
    tortillas
  • 2 c
    lettuce, shredded
  • 2 c
    tomato, chopped
  • 1 c
    cheddar cheese, shredded
  • ·
    refried beans recipe
  • 1/2 c
    vegetable oil
  • 2 c
    pinto beans, cooked
  • 2 Tbsp
    chili powder
  • 1 Tbsp
    cumin
  • 1 tsp
    salt
  • 1/8 tsp
    pepper

How to Make Beef Burritos

Step-by-Step

  1. Tortillas should be 10-inches in diameter and warmed.
  2. Heat beef and refried beans separately.
  3. Place about 1/4 cup of the beef on the center of each tortilla.
  4. Spoon about 2 tablespoons of the beans onto the beef.
  5. Top with 1/4 cup of the lettuce and about 2 tablespoons each of tomatoes and cheese.
  6. Fold one end of the tortilla up about 1 inch over filling; fold right and left sides over folded end, overlapping.
  7. Fold down remaining end, and serve.
  8. REFRIED BEANS: Heat lard in 10-inch skillet over medium heat until hot.
  9. Add pinto beans; cook for 5 minutes, stirring occasionally.
  10. Mash beans; stir in remaining ingredients.
  11. Add oil to skillet if necessary; cook and stir until smooth paste forms, about 5 minutes.
  12. Garnish with shredded cheese, if desired.
