This is really delicious. Great for those cold night dinners.This recipe I have had for 20 years. Very hearty. The bacon and the wine together is just so wonderful. Enjoy with a nice loaf of Italian bread,or french bread.

Ingredients For crock pot beef burgundy

  • 8
    pieces of bacon cut in to 1 inch strips
  • 3 lb
    of chuck beef,or rump roast cut and cubed
  • 1
    medium onion
  • 3-4
    large carrots peeled and chopped
  • 3 Tbsp
    flour
  • 1 Tbsp
    tomato paste
  • 10 oz
    beef broth
  • 1 tsp
    tyme
  • 1
    bay leaf
  • 2 clove
    garlic minced
  • 1/2 lb
    white pearl onions( to remove skin. blanch in boiling water for a minute, and peel)
  • 1 lb
    mushrooms baby bella,or white sliced
  • 2 Tbsp
    butter
  • 1 3/4 tsp
    salt
  • 1/2 tsp
    black pepper ground
  • 1/2 c
    red wine (burgundy)or other

How To Make crock pot beef burgundy

    cook bacon until crisp.drain grease. Add the beef to pan and brown well.Put Beef and bacon in crock pot

    brownthe medium onion and carrots in pan.season with the salt and pepper. stir in the flour,and add broth.Mix and add to crock pot

    add thyme,tomato paste,garlic,bay leaf and pearl onions.Cook on low about 8 hours,or 4-5 on high

    30-60 minutes before done. Saute mushroom in butter,add to crock pot with the wine and cook additional 30-60 minutes.

    Thicken gravy- cream 2 tablespoons of butter with 1/4 cup of flour. Roll in to pea size balls and put in crock pot on high. bring to a boil and stir. serve over egg noodles or rice
