This is an awesome dish that you can have on the table in 30 minutes or less. The spice rub gives the steak just the right amount of kick, and the cooked cherry tomatoes are to-die-for. It only took me two tries to get this right, but I’m so glad that I tried the second time. So, you ready… Let’s get into the kitchen.

The title of this steak recipe is correct - the skirt steak is awesome. Between the steak and tomato mixture, these flavors make your taste buds come alive. The coffee rub is interesting and a really nice mix of flavors. It leans towards southwest flavors and leaves a nice, thick crust on the outside of the meat after the cooking process. It's easy to prepare, just make sure to use a pan that can go into the oven. The tomato mixture is acidic and spicy all at the same time. It's a wonderful addition to the meat.

Ingredients For awesome skirt steak with coffee rub & tomatoes

  • PLAN/PURCHASE
  • 1 1/2 lb
    skirt steak, about 1-inch thick
  • 1 Tbsp
    grapeseed oil, reserved for cooking
  • THE SPICE RUB
  • 1 Tbsp
    finely ground coffee (or if you want a pick-me-up, use espresso powder)
  • 1 Tbsp
    chili powder, mild or hot, your choice
  • 1 tsp
    ground cumin
  • 1 tsp
    ground paprika
  • 1 tsp
    garlic powder
  • 1 pinch
    ground cayenne
  • salt, kosher variety, to taste
  • black pepper, freshly ground, to taste
  • THE TOMATOES
  • 1 c
    cherry tomatoes, halved
  • 2 Tbsp
    yellow onion, finely chopped
  • 2 Tbsp
    lime juice, freshly squeezed
  • 1 Tbsp
    olive oil, extra virgin
  • 1/2 tsp
    red pepper flakes
  • salt, kosher variety, to taste
  • black pepper, freshly ground, to taste
  • 1/2 c
    dry white wine
  • THE ASSEMBLY
  • whole leaves of fresh cilantro, for garnish

    PREP/PREPARE

    THE SPICE RUB
  • Steak and ingredients for the rub gathered.

    Gather your ingredients.
  • Spices combined in a small bowl.

    Combine all the spice ingredients together in a small bowl.
  • Rubbing spices all over the steak.

    Rub the spices into the steak, and allow it to rest for 30 minutes.

    THE TOMATOES
  • Ingredients for the tomatoes gathered.

    Gather your ingredients.
  • Cherry tomatoes cut in half in a bowl.

    Cut the cherry tomatoes in half.
  • Onions, lime juice, olive oil, red pepper flakes, salt, and pepper added to the bowl.

    Add them to a bowl, along with the onions, lime juice, olive oil, red pepper flakes, salt and pepper, and allow the mixture to rest.

    Chef’s Note: Reserve the wine for later in the cooking process.

    THE ASSEMBLY
  • Oven set to be preheated.

    Place a rack in the bottom position, and preheat the oven to 400f (205c).
  • Adding grapeseed oil to a skillet.

    Place a skillet over medium-high heat, and add the grapeseed oil.
  • Steak placed into the hot skillet.

    Allow the steak to sit in the hot pan, undisturbed for 3 minutes.
  • Steak flipped and placed into the oven.

    Flip the steak, and place the pan in the preheated oven, for an additional 3 minutes (for medium rare).
  • Steak resting on a cutting board.

    Remove steak, and allow it to rest.
  • Deglazing the pan with wine.

    Return the pan to medium high heat, and deglaze the pan with the reserved wine.
  • Scraping fonds from the pan.

    Chef’s Note: Use a wooden spoon to scrape up any fonds that have developed on the pan’s surface.
  • Tomato mixture added to the skillet.

    Add the tomato mixture, and cook, until the tomatoes, have softened, and the sauce has reduced, about 4 minutes.

    PLATE/PRESENT
  • Steak thinly sliced.

    Thickly slice the steak against the grain.
  • Tomatoes poured over the steak.

    Ladle over the tomato mixture, and serve with your favorite sides. Enjoy.
