This is a very moist and tasty recipe- a change from the ordinary meatloaf- you are used too.. The peanut butter sauce is a wonderful addition to this recipe. I hope you try it soon! I have also make this with apricot jam and glaze, real good-leave out the peanut butter if you use the jam. Recipe tweaked by me, to my family's liking.

Ingredients For asian meatloaf with peanut butter sauce

2 lbground turkey

1 cplain bread crumbs

8 ozcan crushed pineapple, drained, reserve juice

1/2 ceach chopped onion and red or green bell peppers

1/4 cdiced celery

2 lgeggs, beaten

1/4 cevaporated milk

1/4 csoy sauce
-
1 Tbspfinely minced fresh ginger

1/2 tspblack pepper
- SAUCE
-
1/2 corange juice and reserved pineapple juice to make 1/2 cup

1/2 csoy sauce
-
1/2 ccreamy peanut butter or nutty

2 Tbsprice wine vinegar
-
2 Tbspheaping brown sugar
-
1/2 tspminced fresh ginger
-
1 tspminced garlic
How To Make asian meatloaf with peanut butter sauce

1Preheat oven to 350^; Spray a loaf pan with non-stick vegetable spray. Set aside. LOAF: Combine all ingredients in a large bowl, mixing well to blend all the ingredients. Place in prepared loaf pan. Bake for about 45 minutes, remove from oven and spread about 1/4 of a cup of the sauce or a little more and bake for 10 minutes more. Serve remaining sauce at the table.

2SAUCE Bring all ingredients to a boil; stirring constantly,lower heat and cook until thickened. Pour 1/4 cup over meatloaf 10 minutes before end of loafs cooking time. Serve remainder at the table. So Good-Enjoy!
