Ingredients

  • 4 c
    jasmine rice, cooked
  • 1 bunch
    scallions,chopped
  • 3
    garlic cloves, cut in half
  • 2 Tbsp
    canola oil
  • 1 c
    peas & carrots
  • 1 bunch
    bean sprouts, fresh
  • 2
    eggs, scrambled
  • ·
    soy sauce to taste

How to Make Veggie Thai Fried Rice

Step-by-Step

  1. Start with already cooked jasmine rice, mix with soy sauce to your taste..can use regular or low sodium...I use regular cause it's the only sodium used.
  2. in a wok or large skillet, on medium heat, put the oil and garlic for a about a minute, take out the garlic...it's just to flavor the oil.
  3. saute the chopped scallions, in small batches start adding the rice, stir, stir, stir...add the rest of the ingredients and combine gently on low heat, cover and let sit for about 5-10 minutes, just so the sprouts soften a bit...and all the flavors marry....garnish with the green part of the scallions.
