how can I ever forget this recipe?? My great grand mom would have made it... my grand mom made it.... My mom made it... now I do :) a sure favorite of anyone and everyone...you would instantly fall in love with this fried delight :) My recipe for you (from my mom's kitchen)

Ingredients For poori (fried delight - main dish)

  • 1 c
    indian atta flour (wheat/multi-grain) or self-rising flour (read end-notes)
  • 1/2 c
    and 1 tbsp of water
  • 1/2 tsp
    salt
  • 1 tsp
    butter, melted
  • vegetable oil for deep frying

How To Make poori (fried delight - main dish)

    Mix together flour, salt, butter and 1/2 cup of water to it and start kneading them. (for about 8 min)

    Meanwhile, heat the oil in a pan/cast-iron skillet to 350 F (deep fry temperature)

    Now, knead the dough adding the extra tbsp of water and roll it into a fine dough.Divide the dough into 8 equal-sized smaller balls.

    Take the first ball, press gently on top with your palm to flatten it out a little bit and coat it with some dry atta powder on each side.

    Now using a roller, flatten the dough and make it into a circular disc, roughly 7-8 inch in diameter.

    Drop the disc in the heated oil. Fry one side down till the poori bulges and air pockets swell and then flip to the other side. Don't fry for more than 30-40 seconds or after it has turned a dark shade of yellow.

    Remove immediately and transfer it to a container.Repeat the same with the other balls and enjoy this easy-to-make snack immediately with a side dish :) Serve Hot!!

    End-notes: 1. while frying, make sure that the poori doesn't turn a shade of brown, remove it in less than 45 seconds. 2. You can serve the pooris with a side of my recipe (pindi chole), ketchup , jam, sugar and butter, mint chutney, tamarind chutney or just plain yogurt. 3. I have not made this recipe with self-rising flour before but have learned that if you do, you need to eat it soon and while they are hot for best taste results 4.
