INGREDIENTS

1 3/4 pounds zucchini or other summer squash

1/4 cup minced onion
•
4 cloves garlic, pressed or minced
•
1 tablespoon olive oil
•
2/3 cup chopped fresh basil
•
1/3 cup sour cream
•
2 eggs
•
1 1/2 cup shredded Italian cheese (e.g. Parmesan, fontina, mozzarella, etc.)*
•
Salt and pepper to taste
•
1 teaspoon worth sugar substitute
•
* I think it's best if part of the cheese is a hard cheese, like Parmesan or Asiago, but it isn't vital.
