Greek Lemon Rice

INGREDIENTS
2 tablespoons olive oil
1/2 cup onion, diced
4 green onions, thinly sliced and divided (lights and greens)
1 cup long grained rice
3 cloves garlic cloves, minced/grated
2 cups low sodium chicken broth (or vegetable broth)
1/4 cup lemon juice (~1 lemon)
2 teaspoons lemon zest
1 teaspoon dried oregano
2 tablespoons butter (optional)
1 tablespoon fresh parsley, chopped (or 1 teaspoon dried parsley)
1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
1/4 cup feta, crumbled (optional)
