1 Chopped Onion

1 lb. Shrimp, cleaned and shells removed

4 Cloves Fresh Garlic – chopped finely

1 Bay Leaf
•
1/2 C. Parsley + some for garnish
•
3 Sprigs Fresh Thyme
•
1/8-1/4 Tsp. Red Pepper Flakes
•
1 Tbsp. Tomato Paste
•
1 Cup Dry White Wine
•
1 Slice Fresh Lemon Peel
•
1/2 C. Crushed Tomatoes (I prefer to crush my own.)
•
Kosher Salt and Pepper to taste

1/3 C. Mascarpone Cheese
•
Fresh Parsley for garnish
