8 medium (about 4 ounces total) dried ancho chiles
1 1/2 teaspoons dried oregano, preferably Mexican
1/2 teaspoon black pepper, whole or freshly ground
1/8 teaspoon cumin seeds, whole or freshly ground
A scant 1/4 teaspoon cloves, whole or freshly ground
2/3 cup beef broth
Salt, about 1 teaspoon
ground chili powder
1 tablespoon bacon drippings or oil
2 pounds pork and lamb, cut into 1/2-inch cubes
1 large white onion, chopped
2 to 3 cups beef broth
Salt
Sugar
1 to 2 cups canned tomatoes (optional)
Masa Harina (optional)
About 2 cups of your favorite cooked beans, either homemade or canned
