Frog-Eye Salad — Vintage Dish & Tell

"Pretty, people-pleasing dessert salad perfection...."

INGREDIENTS
1 cup sugar
2 tablespoon flour
2 ½ teaspoon salt
1 ¾ cup pineapple juice
2 eggs, beaten
1 tablespoon lemon juice
3 quarts water
1 tablespoon cooking oil
16-ounce package Acini di Pepe
33-ounce can mandarin oranges, drained and reserve
40-ounce can of chunk pineapple, drained and reserve
20-ounce can of crushed pineapple, drained and reserve
8-ounce container Cool Whip
1 cup miniature, colored marshmallows (optional)
1 cup coconut (optional)
