1 eggplant, about 1 1/2 pounds
olive oil, for brushing slices
Kosher salt
3/4 cup fine fresh breadcrumbs
1/4 cup plus 2 tblsp. Parmigiano Reggiano cheese
freshly ground black pepper
2 1/4 tsp. finely chopped fresh oregano
3 tblsp. chopped basil
1 1/2 tblsp. extra-virgin olive oil
1 recipe Basic Marinara
1 1/4 # fresh mozzarella, sliced in 1/4" thick slices
Extra-virgin olive oil, for drizzling
Parmigiano Reggiano, for garnish
