If you love eggnog, but not all its calories and fat, you'll love this skinny eggnog recipe. It's a guilt-free way to enjoy the Christmas cocktail. Thick and creamy, this eggnog has just the right amount of spice. There is a tiny bit of rum flavoring which adds to the flavor. Drink this skinny eggnog and you can have more cookies.
In a blender combine the cold water and gelatin. Let it sit for a couple of minutes. Add powdered milk, Splenda, eggs, vanilla, rum extract, cinnamon, and nutmeg.
Blend on low for 30 seconds. Add the boiling water.
Blend for another 30 seconds on low until gelatin is dissolved.
Add ice water.
Blend on high for 2 minutes.
Sprinkle cinnamon on top and a reduced fat whip cream on each serving.
