This recipe tastes like apple pie in a float! While I don't drink alcohol as a rule, the Schnapps and bourbon give it a little kick. You could eliminate it if you prefer, as well. I made mine in advance and just whisked it again before I served it. Delish! I made these last night after shopping with my future daughter-in-law for her wedding dress. We all came back to the house, had a pumpkin shaped pizza and I finished with this as a dessert along with the pizza shop's cinnamon ring. The best part is it can be made up in advance. (Since I don't know a thing about alcohol, I went to the liquor store and asked the lady what to buy for apple schnapps and she suggested I buy two little 'airline type' bottles. They were perfect size.

Ingredients For apple pie cider floats

  • 1/4 c
    water
  • 1/4 c
    sugar
  • 1/2 tsp
    cinnamon
  • 2 c
    apple cider
  • 1/4 c
    apple schnapps
  • vanilla ice cream
  • optional--cinnamon stick or dried apple slices
  • 2 Tbsp
    bourbon--ky of course!

How To Make apple pie cider floats

    Make cinnamon syrup first: Put 1/4 cup water, 1/4 cup sugar and 1/2 teaspoon ground cinnamon in a saucepan. Bring to a boil, stirring to melt the sugar thoroughly. Set aside for later.

    In a pitcher, place 2 cups apple cider, 1/4 cup cinnamon syrup previously made up, apple Schnapps, and bourbon. Whisk until blended. (Can also be shaken in a cocktail shaker.)

    Pour about 3 inches of cocktail mix into a coffee mug. Microwave until very warm but not super hot. Drop 3 scoops of ice cream into the mug. Stir a little. Serve with a cinnamon stick or spoon. You can add a squirt of whipped cream on top to decorate. The hot cider melts the ice cream into a wonderful apple pie flavored drink! You can adjust the amount of bourbon and Schnapps as you like.

    If you save this in the fridge for later, be sure to whisk it well before putting in the mug as the cinnamon tends to settle to the bottom when chilled.
