My father could make you the niceness Irish coffee ever they was "the best!"(may God bless his soul).He would always say the secret to a good Irish coffee was =
CREAM :Rich as an Irish brogue,
Coffee: strong as a friendly hand shake ,
Sugar: sweet as the tongue of a rogue,
Whiskey: smooth as the wit of the land...so why don't you give your self a special treat, make yourself an Irish coffee sit back put on your slippers, and relax in front of a nice warm fire , on those long Winter nights....ENJOY :)

Ingredients

  • 1
    heat proof glass
  • 2 tsp
    brown sugar
  • ·
    freshly brewed coffee
  • 3/4 oz
    Irish whiskey (e.g. Jameson, John Powers, Bushmills)
  • ·
    lightly whip cream
  • ·
    a warm spoon

How to Make Irish Coffee from an Irish Cailín

Step-by-Step

  1. Fill the glass you are using with very hot water, leave for 20 seconds so the glass is heated. Empty the water out.
  2. Add 2 teaspoons of brown sugar, now add some coffee, (leave enough room at the top for the cream) and stir. As soon as the sugar is melted, add a generous measure of Irish whiskey ( I use Jameson) stir again, then wait to the brew to still.
  3. Now take a hot teaspoon (stick the spoon in a cup of really hot water for 20 seconds approx ), and pour gently whipped fresh cream slowly over the back of the spoon.
  4. NOTE = The cream should be "half whipped" i.e. not too stiff and not too liquid. A perfect Irish Coffee should look pretty... much like that other famous Irish drink - Guinness.. (*,*)
