reduced fat eggnog

I have a couple of versions of Eggnog. This is a new reduced fat version I created. It has 4 1/2 grams of fat and only 120 calories per serving. Adding Rum will add an additional 60 calories per serving. I hope you all enjoy this version. Happy Holidays, and Merry Christmas to you and yours!

Ingredients For reduced fat eggnog

  • 4
    egg yolks
  • 3 1/4 c
    fat free skim, or 1% milk divided
  • 1/3 c
    sugar or sugar substitute
  • 1 tsp
    cinnamon
  • 3/4 tsp
    nutmeg
  • 1-2 tsp
    corn starch ( depending on preference of thickness of drink)
  • 1 tsp
    vanilla , or rum extract
  • 4
    shots of rum optional
  • low fat whip cream optional

How To Make reduced fat eggnog

    Mix 1/4 cup skim milk with the corn starch. Mix well, and Set aside.

    Place 3 cups Skim milk, and egg yolks in a saucepan. Whisk together. Add in cinnamon, sugar, and nutmeg. Bring to a boil while constantly whisking.

    Whisk in the corn starch mixture. Whisk while boiling. Add in extract. Mix well. Remove from heat. Cool and refrigerate. Shake well begore serving. Optional: Serve with a shot of Rum per serving, Garnish with nutmeg and low fat whip cream.
