I made up this version of the ordinarily fattening cocktail. This drink will knock your socks off. You definitely will not miss the fat at all. You may omit the alcohol for a non alcholic drink. This is one delicious drink. 6 grams of fat each, and 220 calories per serving. This drink tastes like a sinfully fattening drink. Merry Christmas and happy holidays to you and yours!

Ingredients For frozen light spiked coconut eggnog

  • 2 c
    light eggnog
  • 1 tsp
    grated nutmeg
  • 1/2 tsp
    cinnamon
  • NOTE: YOU MAY OMIT FROZEN YOGURT FOR AN EVEN LOWER FAT DRINK. SIMPLY ADD ADDITIONAL ICE IN PLACE OF IT.
  • 3 c
    frozen vanilla yogurt, or light ice cream divided
  • 1 1/2 c
    ice cubes
  • 2 Tbsp
    coconut cream not milk
  • 3/4 c
    coconut rum, spiced or regular
  • light whipped cream garnish
  • grated nutmeg for garnish

How To Make frozen light spiked coconut eggnog

  • 1
    Place the eggnog, nutmeg, and cinnamon into a blender or food processor. Add in one cup of frozen French vanilla yogurt or low fat ice cream.

    Add in the ice cubes, cream of coconut, and Rum optional. Blend until smooth.

    Place about a Half cup scoop of yogurt or ice cream in each glass. Top it off with the eggnog mixture. Top each serving with light whipped cream. Sprinkle cream with nutmeg and serve. Makes 4 servings.
