This cocktail originated at the Bourgeois Pig, in Lawrence, Kansas Moscow mule enthusiasts will appreciate this simple highball that substitutes rye whisky for the standard vodka. The easy drinking combination of rye, ginger beer, lemon juice and bitters was created in the 1990s and seems to be a riff on the Horse’s Neck. The Horsefeather is ideal for those who prefer their mule with a stronger kick. The Horsefeather is an excellent gateway drink for anyone who thinks whiskey is best left to cowboys and criminals.

Ingredients For horsefeather (kansas)

  • 2 ounces rye whiskey
  • 4 ounces ginger beer
  • 2 dashes cocktail bitters
  • lime wedge for garnish
