Lots of kids and singles at First Baptist in Pensacola called her Mama Meacham. We called her Lawren. We immediately became friends after she and Joan visited us, encouraging us to move our membership to First Baptist. This is just one of the recipes that Lawren shared with me through the years. I'm sure it's available in lots of cookbooks, but it's special to me because she wrote it out for me. So . . . to me, it's her recipe. Very, very yummy!

Ingredients For pudding dessert

  • 1 c
    flour
  • 1 stick
    butter, softened
  • 1 c
    chopped pecans
  • 1
    8-oz. cream cheese, softened
  • 1
    9-oz. cool whip
  • 1 c
    sifted confectioners' sugar
  • 2
    4-oz. packages instant chocolate pudding
  • 3 c
    milk

How To Make pudding dessert

  • 1
    Mix flour, butter, and pecans. Spread in a buttered (greased or sprayed) 9"x12" pan and bake at 350 for about 20 minutes or until lightly browned.

    Cream together cream cheese, half of the 9-oz. Cool Whip, and confectioner's sugar. Spread on cooled crust.

    Mix instant chocolate pudding with milk until of pudding consistency. Spread on top of cream cheese mixture.

    Spread remainder of Cool Whip on top. Refrigerate. So yummy!

    For me, the best thing about this dessert is that the recipe came from Lawren, and I think of her every time I make it. Truth be told, I think of her a lot . . . not just when I make this recipe.
