This is all 8 of my children's favorite side dish! It's sweet and delicious. Everyone asks for the recipe, and it couldn't be easier. No one can believe there is sour cream in here. Great to bring for a last-minute invite to a barbecue. And... it's only 3 ingredients! I always keep the ingredients on hand in the summer or just send the hubby for the sour cream. Enjoy!

Have you ever had pineapple Dole whip? This tastes just like a pudding version of that with chunks of pineapple and vanilla flavor. When we first mixed this, it was a little thick and we weren't sure we go the texture right. But, once it chilled magic happened. The ingredients absorb into each other and the salad becomes the perfect cool and creamy treat. With 3 simple ingredients, it can be whipped up in a flash. This may replace traditional fruit salad at your summer cookouts.

Ingredients For pineapple pudding salad

  • 1 box
    instant vanilla pudding (5.1 oz)
  • 1 can
    crushed or tidbits pineapple (15.25 oz)
  • 16 oz
    sour cream

We let ours chill for about 3-4 hours.
  • Mixing pineapple and pudding mix.

    Mix a can of pineapple, undrained, with the box of vanilla pudding. Stir and let the pudding absorb the juice.
  • Adding sour cream to the bowl.

    Add the container of sour cream.
  • Stirring in the sour cream.

    Mix well.
  • Pineapple Pudding Salad covered to chill.

    Variations: add mandarin oranges, grapes, apples, or fruit cocktail mix; also can be used on top of a fresh fruit salad or as a dip. You could also substitute the sour cream with Greek yogurt making it almost fat-free. (Low-fat sour cream works just as well.)
