This was fun recreating one of grandmas favorite recipes. I am sure she is looking down,watching and smiling!This was one way to make sure we ate all our oatmeal as children! It was always it was a treat back in the early 40's watching grandma bake or cook. Occasionally she would let me help.The later awards, was worth it! So here is the recipe she used...from her old church cookbook. Actually it could be called oatmeal-coconut pie! This pie uses 1/2 cup of each in this recipe! Plus,Grandpa always made a monkey face string holder from 1/2 of the coconut shell, and sold them. Nancy...1/22/13

Ingredients For ole"oatmeal pie"w/a coconut monkey!

  • 1/4 c
    butter
  • 3
    eggs........add one at a time & beat
  • 1 c
    dark corn syrup
  • 1/2 tsp
    salt
  • 1/2 c
    sugar
  • 1/2 c
    quick oatmeal
  • 1/2 c
    flaked coconut

How To Make ole"oatmeal pie"w/a coconut monkey!

    Cream together butter and 3 eggs one at a time then syrup and salt.MIX.

    Add sugar, oatmeal and coconut. Mix.

    Pour into (your recipe) unbaked pie shell. Bake in a pre-heatd 350F. oven for 35-40 minutes.

    When done take out and cool on a wire rack. Then keep in ice box til serving time.

Grandpa drilled three holes in the coconut, for eyes and a mouth. Where the string will come out. and drained the milk into a bowl, to drink later. Then he sawed the coconut shell in half. Put a ball of string in the face half, glued a piecse of cardboard on the back,making a string hole for hanging on the kitchn wall!
