I would like to share this wonderful pie with a little history to it. In the 80's and driving our way back from Florida to Chicago. We happened to stop in Georgia, and purchased a bag of the states delicious sweet (GA.)Vandalia onions,along with this great buttery sweet stuffed onion pie recipe. Years later I moved to Spokane, WA.and now enjoy the states great,Walla Walla sweet onions.Pictured. Another sweet onion is the Maui from Island of Maui.The onions are named for where they are grown.They are so sweet you can eat them like an apple! Also try a fried egg,onion & mayo sandwich.YUMMY!!

Ingredients For sweet onion cheddar pie (wallas,maui or vandalia)

  • 1-1/2 c
    round buttery crackers, crumbled
  • 6 Tbsp
    butter, softened
  • 2-1/2 c
    sweet onions, thinly sliced
  • 2 clove
    garlic, minced
  • 1 Tbsp
    minced chives
  • 3/4 c
    whole milk
  • 2
    eggs
  • 1/2 tsp
    salt
  • 3/4 c
    cheddar cheese, shredded
  • 1 pinch
    paprika
  • 1 Tbsp
    fresh parsley, chopped

How To Make sweet onion cheddar pie (wallas,maui or vandalia)

    Pre-heat oven to 350 F. In a mixing bowl, combine crackers and 4 Tablespoons of of butter until well blended. Press into the bottom and i inch up the sides of a 8 inch pie plate to form a crust. Refrigerate till needed.

    Melt remaining 2 Tablespoons of butter in a heavy skillet over a medium heat. Saute the onions and garlic slowly until tender, about 12 minutes. Arrange sauteed onions into the cracker crust.

    Beat eggs, whole milk, chives, and salt in a bowl until blended. Pour over the onions. Sprinkle with the cheese and paprila.

    Bake in the pre-heated oven for 35 minutes, or until a knife inserted comes out clean. Garnish with parsley. Serve and enjoy, this special gourmet treat ! 5/2/12
