If you are familiar with Chinese steamed buns filled with red bean paste, you will delight in this pie. During my time learning to speak Chinese in school, I worked in a Asian food mart/Chinese restaurant. That is where I fell in love with it. This is an American rendition of an Asian favorite.

Ingredients

azuki beans
1/2 c
butter, unsalted, room temperature

eggs
1/2 c
sugar
1/2 c
dark brown sugar
1/2 c
cream or whole milk
1/2 tsp
cinnamon
1/2 tsp
allspice
1/2 tsp
ginger
1 Tbsp
vanilla
1

How to Make Sweet Azuki Bean Pie

Step-by-Step

  • 1Boil beans until soft. Rinse.
  • 2Preheat oven to 350.
  • 3Place bean in food processor or blender with butter. Blend until smooth.
  • 4Add other ingredients, blend for an additional minute.
  • 5Pour into unbaked crust.

  • 6Bake until a toothpick in center comes out clean.
  • 7Best served with ginger whipped cream. Try my recipe.
