This is my moms recipe. If you like rhubarb this is soooo good!! It is my favorite rhubarb pie recipe.

Ingredients

  • 4 c
    fresh or frozen rhubarb, cut into small pieces
  • 1 c
    sugar
  • 2
    eggs yolks
  • 1 c
    can evaporated milk
  • 1/8 tsp
    salt
  • 2 Tbsp
    flour (use 3 tbsp. if rhubarb is frozen)
  • 1 tsp
    cinnamon

How to Make Creamed Rhubarb Pie

Step-by-Step

  1. Put cut up rhubarb into unbaked pie crust.
    ( I use deep dish pie crust)
  2. In large bowl beat 2 egg yolks.
    ( I use hand beater, pictured.)
  3. Add flour, sugar, salt, milk, 1/2 tsp. cinnamon to beaten eggs, mix.
    (use remaining 1/2 tsp. cinnamon for top of pie)
  4. Pour mixture over rhubarb.
    Sprinkle remaining 1/2 tsp. cinnamon on top of pie.
  5. Bake 375 degrees for one hour or until custard is set.
