    finely chopped hazelnuts

  • 1/4 c

  • 1 1/2 Tbsp
    butter, melted
  • FOR MILK BATH
  • 1 c
    milk, 2%
  • 1/2 c
    condensed milk
  • 4
    cardamom

How To Make the wedding (hazelnut samosas soaked in milk mix)

  • 1
Combine flour, salt, white sugar, butter and mix. Add water to the mixture and knead it for about 6-8 min and make a fine dough. Set it aside.
  • 2
In a sauce pan, mix together milk and condensed milk till all the condensed milk dissolves in the milk. Add cardamom to the mixture. Heat the mixture on medium flame for about 5-10 min or till it reaches a boil. Then turn off the heat and pour the mixture into a wide serving dish.
  • 3
Mix together coconut, hazelnuts and brown sugar. Add 1 1/2 tbsp of butter to a saucepan and heat on med-low for about 10 seconds and add this mixture to it.
  • 4
Fry the mixture for about 3-4 min. When the brown sugar begins to caramelize turn off the heat and set this crispy mixture aside.
  • 5
Now take the dough, divide it into 8 equal sized balls.
  • 6
Roll each portion into a circular disc. For each disc, take a tbsp of the filling and place it at it's center. Fold the disc in half and seal the edges firmly.
  • 7
Repeat the same for the rest. You get your 8 sweet samosas!
  • 8
Heat the vegetable oil to 350 F and deep fry the samosas one by one (till each turns a shade of golden brown)
  • 9
As soon as you take a samosa out of the oil, drop it in the milk bath and pour little milk over the samosa using a spatula. Repeat the same for the rest.
  • 10
Serve each samosa in about 10-15 min with a little bit of the milk bath, or after the samosas have absorbed all the milk bath completely in about 1 hour.
  • 11
End notes: 1. For decoration, I just dribbled some condensed milk on top of each samosa and sprinkled some hazelnuts and coconut shreds 2. The dough can be made one or two days in advance. 3. You can make this sweet few hours in advance. This way the samosas would have completely absorbed all the milk making it vanish and tripling the taste!! 4. Each soaked samosa can be cut in half and the same 8 samosas can be served to 16 people 5. the filling stays intact even while frying if the edges have been sealed properly and continues to stay that way even after being soaked in milk bath for hours HENCE, Celebrate THE WEDDING :)
