outrageous pina colada muffins

Here in the Jersey "boonies" up in the far NW pocket, I volunteer to coach a children's running program in the winter. It's cold, so to make it fun, decided to have a Beach themed relay race as part of practice. I needed a prize for the winning team and came up with this recipe. Warning: they are sinfully good!

Ingredients For outrageous pina colada muffins

  • 1 box
    dunkin hines pineapple supreme cake mix (18.25 oz)
  • 1 pkg
    dunkin hines coconut pecan frosting (15 oz)
  • 4
    eggs
  • 3/4 c
    vegetable oil
  • 1 c
    water

How To Make outrageous pina colada muffins

    Preheat Oven to 350
  • 2
    Combine all ingredients and mix until well blended, scraping bowl with spatchula to ensure you get the sides.

    Pour into muffin papers and bake about 20 minutes or until tops are brown and cake springs back. Do not overbake.
