Gluten free Banana Chocolate Chip Scones
potato starch (not potato flour)
xantham gum or guar gum
solid shortening. such as earth balance natural shortening
buttermilk or yogurt
How to Make Gluten free Banana Chocolate Chip Scones
1Combine flours, starches and xantham or guar gum, baking powder, and baking soda.
Preheat oven to 400 and Line large baking sheet with parchment.
2Cut shortening into flour mix either by using pastry blender or 2 knives until it resembles small peas. Mash banana. Add sugar and mashed banana to flour mix.
3Beat 2 eggs with either buttermilk or yogurt. And add to dry ingredients. Mix in chocolate chips.
Drop batter onto baking sheet using ice cream scoop spaced 2 inches apart.
4Bake 10-12 minutes until tops are lightly browned.
You can brush melted butter to tops before baking for extra flavor. For added sweetness add 1/2 teaspoon vanilla.
