Bananas and chocolate, my favorites. So why not enjoy them both in a scone? These scones come out light and fluffy.

1/2 c
white rice flour
1/2 c
potato starch (not potato flour)
1/2 c
1/4 c
corn flour
1/4 c
tapioca flour
2 tsp
xantham gum or guar gum
1/4 c
2 tsp
baking powder
1/2 tsp
baking soda
4 Tbsp
solid shortening. such as earth balance natural shortening
eggs, large beaten
3/4 c
buttermilk or yogurt
1/2 c
chocolate chips

How to Make Gluten free Banana Chocolate Chip Scones


  • 1Combine flours, starches and xantham or guar gum, baking powder, and baking soda.

    Preheat oven to 400 and Line large baking sheet with parchment.
  • 2Cut shortening into flour mix either by using pastry blender or 2 knives until it resembles small peas. Mash banana. Add sugar and mashed banana to flour mix.
  • 3Beat 2 eggs with either buttermilk or yogurt. And add to dry ingredients. Mix in chocolate chips.

    Drop batter onto baking sheet using ice cream scoop spaced 2 inches apart.
  • 4Bake 10-12 minutes until tops are lightly browned.

    You can brush melted butter to tops before baking for extra flavor. For added sweetness add 1/2 teaspoon vanilla.
