A traditional Indian sweet...passed down through generations...

I still remember the day like yesterday when my paternal aunt made this sweet for my farewell party

Even now, reminiscing that day, the taste of butter and carrots, so well-balanced, makes my mouth water

Blue Ribbon Recipe

Yum, yum, yum! What a sweet surprise this was! I may add a few more cashews next time because they were so darn good. The Test Kitchen

Ingredients

  • 1 c
    carrots, grated
  • 1 c
    milk, low-fat
  • 2 Tbsp
    sweetened condensed milk
  • 4 Tbsp
    white sugar
  • 6
    cashews
  • 6
    raisins (optional)
  • ·
    cardamom/ saffron (optional)
  • 2 Tbsp
    butter

How to Make Carrot Halwa

Step-by-Step

  1. Take a microwavable bowl, add the cup of milk and grated carrot and mix them together. Microwave the mixture on high for about 2-3 mins, one min at a time to avoid overflows.
  2. Meanwhile, in a saucepan, add butter and melt it. Let the butter turn a tinge of golden brown and then fry the cashews and raisins in it.
  3. Now add the carrot and milk mixture to the saucepan, add the condensed milk and sugar. Keep mixing all the ingredients till carrot gets completely cooked and the mixture condenses to form a thick sweet. (for about 20-25 mins depending on your range, stirring occasionally, keeping the heat on medium alternating with low-medium )

MOST IMPORTANT: Indian delicacies are like delicate cute babies...never leave them alone :)
  4. Now turn off the heat and stir in a couple of saffron or cardamom pieces. You can garnish the sweet with couple of cashews or rainsins or just decorate it with sliced almonds.
